Guyot trained vines, planting density of more than 5000 stumps per hectare.
VINIFICATION / MATURATION
The grapes are harvested by hand and kept apart, depending on the exposure of the vineyard and the quality of the vine.
In spring, the various wines are blended, thereby creating a base sparkling wine to which a very precise quantity of cane sugar and selected yeast is added. Then it is bottled and begins to become frothy, with the consequent conversion by the yeast of the sugar into alcohol and carbon dioxide, ageing in the bottles for a minimum of 36 months.
The disgorging takes place without any addition of sugars in the “liqueur d’expédition,” in order to obtain a complex, balance, elegant and persistent product which represents the best expression of the territory from which it comes.
SENSORY CHARACTERISTICS
Colour : Straw yellow
Perlage: Softy, abundant foam, with subtle and persistent perlage.
Aroma : Very complex, ample, fragrant and lively.
Taste: Particularly dry, decisive, with great structure.
Accompaniment:Ideal as an aperitif, excellent with many dishes, unbeatable with oysters and shellfish
